Basic Kale Salad
Yield: Dinner salad for two (sometimes only one if you are really hungry and it's a small bunch of kale)
Ingredients
- 1 bunch of Kale (Lacinato or Curly Kale)
- 1 medium size avocado
- 1 lemon, juiced
- 1/2 teaspoon salt
Directions
De-stem and chop the kale. If using lacinato kale, chop in long thin strips (chiffonade). If using curly kale, chop into bite size pieces. Place kale in a large salad bowl. Add the avocado meat, lemon juice and salt. Massage the greens for about 10 minutes until kale is broken down. Serve.
Notes
Nice additions include pine nuts, chopped tomatoes, cranberries, sliced red onions.
